Paleo Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour
  • ¼ cup coconut flour
  • cup coconut sugar
  • 1 ½ tsp baking soda
  • ¼ tsp salt
  • 1 unit egg or flax egg
  • cup almond butter
  • ¼ cup virgin coconut oil, melted
  • 3 Tbsp water or almond milk
  • 1 tsp pure vanilla extract
  • ½ cup dark chocolate chips and/or chunks
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350℉.
  2. Combine and mix all ingredients in a bowl.
  3. Drop dough onto a lined baking sheet using a cookie scoop.
  4. Form the dough into round mounds and flatten them slightly.
  5. Bake for 10-16 minutes until the edges are crisp.
  6. Cool on the baking sheet for 5-10 minutes before transferring to a cooling rack.
  7. Store cooled cookies in an airtight container.
