Paleo Double Chocolate No-Bake Cookies

The cookie base

raw almond butter or sunbutter with no added sugar

packed, soft pitted Medjool dates

The coating

raw cacao butter (melted dark chocolate would also work)

honey
Instructions
- Puree almond butter or sunbutter with dates in a food processor.
- Add shredded coconut, cacao powder, vanilla, and salt; puree until sticky.
- Optionally, fold in chopped dark chocolate.
- Scoop the mixture into 12 balls using a 3/4 oz scoop or hands.
- Place cookies on parchment paper and freeze for 30 minutes.
- Melt cacao butter and honey over a double boiler.
- Spoon the melted mixture over the cookies and chill to solidify.
- Store cookies in the fridge.
