The teriyaki sauce

Instructions
- Score and slice the white part of the scallion, then set it aside in cold water.
- In a large bowl, combine ground beef, onion, carrot, breadcrumbs, soy sauce, ginger, egg, sake, salt, and pepper, and mix well.
- Take a small amount of the mixture, shape it into a meatball using your hands and a spoon.
- Heat oil in a pan to 170°C (338°F) and deep fry the meatballs until golden brown.
- Prepare the teriyaki sauce by mixing soy sauce, sake, sugar, mirin, and water in a small pan and heating until slightly thickened.
- Coat the fried meatballs in the teriyaki sauce and serve in a shallow bowl.
- Drain the water off the scallions, sprinkle sesame seeds over the meatballs, and top with sliced scallions.
