Skillet Teriyaki Meatballs

Ingredients

The sauce

  • ½ cup low-sodium soy sauce
  • cups water
  • 1 teaspoon ground ginger or grated fresh ginger
  • ½ teaspoon garlic powder
  • cup packed light or dark brown sugar
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch

The meatballs

  • 2 pounds lean ground beef or ground turkey
  • 2 large eggs
  • cup bread crumbs (preferably panko)
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • teaspoons Worcestershire sauce
  • ¼ teaspoon garlic powder
  • 2 to 3 tablespoons milk
  • 1 tablespoon olive oil
  • to taste sliced green onions (for garnish)

Instructions

  1. Whisk together all sauce ingredients in a bowl until smooth.
  2. In a large bowl, combine all meatball ingredients except oil and green onions, and mix well.
  3. Form the mixture into meatballs about 1 to 2 inches in size.
  4. Heat olive oil in a nonstick skillet over medium heat until hot.
  5. Add meatballs in a single layer and brown on all sides.
  6. Pour the sauce over the meatballs and gently coat them.
  7. Bring to a simmer and cook for 10-15 minutes until meatballs are cooked through, stirring occasionally.
  8. Serve over hot cooked rice, quinoa, or couscous, garnished with green onions if desired.
