Ingredients

Homemade Teriyaki Sauce

  • ½ cup coconut aminos
  • cup water
  • 2 tablespoons honey
  • 2 cloves garlic, finely minced or grated
  • 1 teaspoon grated and peeled fresh ginger
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon corn starch
  • 2 tablespoons water (for corn starch mixture)

Meatballs

  • 1 teaspoon avocado oil or olive oil
  • 6 pieces green onions, sliced
  • 2 pounds lean ground beef
  • 3 tablespoons Homemade Teriyaki Sauce
  • ½ teaspoon fine salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a saucepan, combine coconut aminos, water, honey, garlic, ginger, and sesame oil over medium-high heat to make the teriyaki sauce.
  3. In a separate bowl, dissolve corn starch in cold water.
  4. Once the sauce simmers, add the corn starch mixture while whisking until thickened, then set aside.
  5. Sauté the white/light green parts of the green onions in oil until softened.
  6. In a bowl, mix ground beef, sautéed onions, teriyaki sauce, salt, and pepper until well combined.
  7. Form the mixture into 30 meatballs and place them on the baking sheet.
  8. Bake the meatballs for 13-15 minutes or until cooked through.
  9. Toss the cooked meatballs with the remaining teriyaki sauce and garnish as desired.
