Instructions
- Mix the dry rub ingredients together.
- Trim the brisket of silver skin and excess fat.
- Coat the brisket with the dry rub, massaging it into the meat.
- Wrap the brisket tightly in foil and refrigerate overnight.
- Take the brisket out of the refrigerator an hour before cooking.
- Preheat the oven to 275°F.
- Insert a meat thermometer into the thickest part of the brisket.
- Slow roast the brisket until it reaches an internal temperature of 175°F.
- Open the foil and continue roasting until the internal temperature reaches 195-205°F.
- Let the brisket rest for an hour before slicing against the grain.
