Ingredients

The brisket

  • 5 lb beef brisket

The dry rub

  • ¼ cup brown sugar
  • 2 tablespoon coarse sea salt
  • 1 tablespoon cracked black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried mustard
  • 1 teaspoon dried thyme

Instructions

  1. Mix the dry rub ingredients together.
  2. Trim the brisket of silver skin and excess fat.
  3. Coat the brisket with the dry rub, massaging it into the meat.
  4. Wrap the brisket tightly in foil and refrigerate overnight.
  5. Take the brisket out of the refrigerator an hour before cooking.
  6. Preheat the oven to 275°F.
  7. Insert a meat thermometer into the thickest part of the brisket.
  8. Slow roast the brisket until it reaches an internal temperature of 175°F.
  9. Open the foil and continue roasting until the internal temperature reaches 195-205°F.
  10. Let the brisket rest for an hour before slicing against the grain.
