Ingredients

The beans

  • 1 pound dried black beans

The vegetables

  • 1 cup chopped red onion
  • 1 cup chopped red pepper
  • 4 cloves garlic

The liquids

  • 4-5 cups vegetable broth
  • ½ cup red wine
  • 2 teaspoons balsamic vinegar

The seasonings

  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

For sautéing

  • drizzle none oil or broth

Instructions

  1. Sauté onion, pepper, and garlic in oil or broth until softened.
  2. Add the remaining ingredients and bring to a rapid boil for about 10 minutes.
  3. Cover, reduce heat, and simmer for about an hour, checking for desired texture.
  4. Serve as desired; they will thicken as they cool.
