Ingredients

  • cups white whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup melted ghee or butter
  • ½ cup maple syrup
  • 1 tbsp maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 cups chopped peaches
  • ½ tsp cinnamon

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch square pan.
  2. Blanch the peaches in boiling water for 30 seconds, then transfer them to cold water to cool and remove the skins.
  3. In a small bowl, combine the dry ingredients and set aside.
  4. In a large bowl, mix the ghee, ½ cup maple syrup, eggs, and vanilla until combined.
  5. Add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the chopped peaches.
  7. Transfer the batter to the prepared pan and drizzle the remaining maple syrup mixed with cinnamon on top.
  8. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cake on a wire rack before cutting it into 9 square pieces.
