Peach Maple Cake

Instructions
- Preheat the oven to 350°F and grease a 9-inch square pan.
- Blanch the peaches in boiling water for 30 seconds, then transfer them to cold water to cool and remove the skins.
- In a small bowl, combine the dry ingredients and set aside.
- In a large bowl, mix the ghee, ½ cup maple syrup, eggs, and vanilla until combined.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the chopped peaches.
- Transfer the batter to the prepared pan and drizzle the remaining maple syrup mixed with cinnamon on top.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake on a wire rack before cutting it into 9 square pieces.
