Ingredients

The pancake batter

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 2 large eggs
  • 1⅔ cups milk
  • 1 tablespoon pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1 large peach
  • as needed none butter, oil, or nonstick cooking spray

Toppings

  • as needed none butter
  • as needed none maple syrup
  • as needed none whipped cream

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. In a separate bowl, combine the wet ingredients.
  3. Make a well in the center of the dry ingredients and pour in the wet ingredients, mixing gently until just combined.
  4. Let the batter rest for 10 minutes.
  5. Heat a skillet and add butter or oil.
  6. Scoop a scant ¼ cup of batter onto the skillet and arrange peach slices on top.
  7. Cook until golden brown on one side, then flip and cook the other side until golden.
  8. Serve immediately with desired toppings.
