Instructions
- Whisk together the dry ingredients in a large bowl.
- In a separate bowl, combine the wet ingredients.
- Make a well in the center of the dry ingredients and pour in the wet ingredients, mixing gently until just combined.
- Let the batter rest for 10 minutes.
- Heat a skillet and add butter or oil.
- Scoop a scant ¼ cup of batter onto the skillet and arrange peach slices on top.
- Cook until golden brown on one side, then flip and cook the other side until golden.
- Serve immediately with desired toppings.
