Ingredients

The batter

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons buttermilk
  • 1 tablespoon canola oil
  • 1 large egg
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2 medium peaches

Optional toppings

  • to taste strawberries
  • to taste powdered sugar
  • to taste maple syrup

Instructions

  1. Combine the dry ingredients in a medium bowl.
  2. In a small bowl, whisk together the wet ingredients.
  3. Pour the wet mixture into the dry mixture and stir until just combined; the batter will be lumpy.
  4. Gently fold in the diced peaches.
  5. Grease a non-stick skillet and heat it to medium.
  6. Pour batter onto the skillet and cook until edges bubble, then flip and cook the other side.
  7. Serve with your choice of toppings.
