Instructions
- Combine the dry ingredients in a medium bowl.
- In a small bowl, whisk together the wet ingredients.
- Pour the wet mixture into the dry mixture and stir until just combined; the batter will be lumpy.
- Gently fold in the diced peaches.
- Grease a non-stick skillet and heat it to medium.
- Pour batter onto the skillet and cook until edges bubble, then flip and cook the other side.
