Strawberry Pancakes

Ingredients

The batter

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter, melted
  • 1 cup fresh strawberries

For serving

  • to taste butter
  • to taste maple syrup or whipped cream

Instructions

  1. Whisk together the dry ingredients in a bowl.
  2. Make a well in the center and add the wet ingredients; mix until smooth.
  3. Gently fold in the strawberries.
  4. Heat a griddle or frying pan over medium heat and grease if desired.
  5. Pour approximately ¼ cup of batter for each pancake onto the griddle.
  6. Cook until bubbles form, then flip and brown the other side.
  7. Repeat with remaining batter to make about 8 pancakes.
  8. Serve hot with butter and maple syrup or whipped cream.
