Instructions
- Blend the wet ingredients including banana, 1 cup of sliced strawberries, eggs, almond milk, vanilla, and honey until smooth.
- Add the dry ingredients to the blender and blend until the batter is smooth.
- Prepare the remaining strawberries by slicing them into small chunks.
- Heat a pan over medium heat and spray with coconut oil cooking spray.
- Pour about ⅓ to ½ cup of batter onto the pan and sprinkle with strawberry chunks.
- Cook for 2 to 3 minutes until bubbles form, then flip and cook for another 2 to 3 minutes.
- Repeat until all batter is used and serve with additional strawberries, banana slices, and maple syrup or honey.
