Ingredients

Wet Ingredients

  • 1 medium banana
  • 1 pint fresh strawberries, divided
  • 2 large eggs
  • ¾ cup unsweetened, plain almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup honey

Dry Ingredients

  • cups white whole wheat flour
  • 2 teaspoons baking powder
  • teaspoon salt

Instructions

  1. Blend the wet ingredients including banana, 1 cup of sliced strawberries, eggs, almond milk, vanilla, and honey until smooth.
  2. Add the dry ingredients to the blender and blend until the batter is smooth.
  3. Prepare the remaining strawberries by slicing them into small chunks.
  4. Heat a pan over medium heat and spray with coconut oil cooking spray.
  5. Pour about ⅓ to ½ cup of batter onto the pan and sprinkle with strawberry chunks.
  6. Cook for 2 to 3 minutes until bubbles form, then flip and cook for another 2 to 3 minutes.
  7. Repeat until all batter is used and serve with additional strawberries, banana slices, and maple syrup or honey.
