Ingredients

The pancakes

  • 1 banana ripened
  • ¼ cup Vanilla Protein Powder
  • 1 egg egg
  • 3 tbsp Egg Whites
  • ½ tsp ground cinnamon

The toppings

  • ¼ cup Strawberries
  • ¼ cup blueberries
  • 1 tbsp Almond Butter

Instructions

  1. Mash the banana in a bowl, leaving some chunks for texture.
  2. Add the egg, egg whites, protein powder, and cinnamon, and stir to combine.
  3. Heat a skillet over medium-high heat and spray with coconut oil spray.
  4. Drop the pancake mixture onto the skillet in ¼ cup portions.
  5. When the edges look done and bubbles form, flip the pancakes.
  6. Top the finished pancakes with berries and drizzle with almond butter or maple syrup.
