Ingredients

The pancakes

  • 6 Tablespoons unsalted butter, melted and slightly cooled
  • cups all-purpose flour
  • cup granulated sugar
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 cup sliced strawberries

For serving

  • to taste honey butter
  • to taste maple syrup

Instructions

  1. Melt the butter and let it cool slightly.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, buttermilk, and vanilla, then mix in the melted butter.
  4. Combine the wet and dry ingredients gently, then fold in the strawberries.
  5. Heat a griddle or skillet and grease it with butter or nonstick spray.
  6. Pour a heaping ¼ cup of batter onto the griddle and cook until edges are set, then flip and cook until done.
  7. Keep pancakes warm in a low oven while cooking the remaining batter.
  8. Serve immediately with honey butter and maple syrup.
