Instructions
- Melt the butter and let it cool slightly.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, buttermilk, and vanilla, then mix in the melted butter.
- Combine the wet and dry ingredients gently, then fold in the strawberries.
- Heat a griddle or skillet and grease it with butter or nonstick spray.
- Pour a heaping ¼ cup of batter onto the griddle and cook until edges are set, then flip and cook until done.
- Keep pancakes warm in a low oven while cooking the remaining batter.
- Serve immediately with honey butter and maple syrup.
