Ingredients

The cake

  • 1 and ¾ cups cake flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 3 large egg whites
  • 2 teaspoons pure vanilla extract
  • ½ cup full-fat sour cream
  • ½ cup whole milk

The frosting

  • 1 cup unsalted butter
  • 4-5 cups confectioners’ sugar
  • ¼ cup heavy cream or whole milk
  • 2 teaspoons pure vanilla extract
  • to taste salt
  • to decorate sprinkles

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare three 6-inch cake pans with parchment paper.
  2. Whisk together the dry ingredients for the cake.
  3. Cream the butter and sugar together, then add the egg whites and vanilla extract.
  4. Mix in the sour cream and then the dry ingredients, alternating with the milk.
  5. Divide the batter evenly among the prepared pans and bake for 18-21 minutes.
  6. Cool the cakes completely before frosting.
  7. Prepare the frosting by beating the butter and adding the confectioners’ sugar, cream, and vanilla.
  8. Assemble the cake by layering the cake rounds with frosting in between.
  9. Decorate the cake with frosting and sprinkles.
  10. Refrigerate for 30-45 minutes before serving.
