Ingredients

The Cake

  • 3 and 2/3 cups cake flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 and ½ cups unsalted butter
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 large egg whites
  • 1 tablespoon pure vanilla extract
  • 1 and ½ cups buttermilk

The Vanilla Buttercream

  • 1 and ½ cups unsalted butter
  • 5 and ½ cups confectioners’ sugar
  • cup whole milk or heavy cream
  • 1 and ½ teaspoons pure vanilla extract
  • teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare three 9-inch cake pans with grease and parchment paper.
  2. In a bowl, whisk together the cake flour, salt, baking powder, and baking soda.
  3. Using a mixer, beat the butter and sugar until creamy, then add the eggs, egg whites, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and mix until just combined.
  5. Divide the batter evenly among the prepared cake pans and bake for 23-26 minutes until a toothpick comes out clean.
  6. Allow the cakes to cool completely in the pans on a wire rack.
  7. For the frosting, beat the butter until creamy, then add confectioners’ sugar, milk, vanilla extract, and salt, mixing until smooth.
  8. Level the cooled cake layers, then assemble by spreading frosting between the layers and covering the entire cake.
  9. Refrigerate the assembled cake for at least 1 hour before slicing.
