Classic Vanilla Bundt Cake

Ingredients

The cake

  • 1 ½ cups all purpose flour
  • ¼ cup cornstarch
  • ¼ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • ¼ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 large egg white
  • ½ cup buttermilk
  • 1 tablespoon vanilla extract

For dusting

  • ¼ cup confectioners sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a bundt pan with butter and dust it with granulated sugar.
  3. Sift together the flour, cornstarch, baking powder, baking soda, and salt in a bowl and set aside.
  4. In a stand mixer, combine granulated sugar, vegetable oil, and melted butter, mixing for 1 minute until pale yellow.
  5. Add the eggs, egg white, and vanilla extract, mixing for 1-2 minutes.
  6. Mix in half of the buttermilk, then half of the dry ingredients, folding gently.
  7. Repeat with the remaining buttermilk and dry ingredients.
  8. Pour the batter into the prepared bundt pan and tap to release air bubbles.
  9. Bake for 30-35 minutes or until a toothpick comes out with moist crumbs.
  10. Cool the cake in the pan for 10-15 minutes before inverting onto a plate.
  11. Dust with powdered sugar and serve with berries.
