Vanilla Wafer Cake

Ingredients

  • 8 oz unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 6 large eggs, room temperature
  • 11 oz vanilla wafers, crushed to a fine crumb
  • ½ cup whole milk
  • 2 teaspoons vanilla extract
  • 7 oz sweetened shredded coconut
  • 1 cup pecans, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Grease and flour a bundt pan.
  3. Pulse the vanilla wafers in a food processor until they are fine crumbs.
  4. In a stand mixer, cream the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Mix in half of the crushed vanilla wafers.
  7. Add the milk and mix until combined.
  8. Add the remaining crushed vanilla wafers and mix just to combine.
  9. Fold in the vanilla extract, shredded coconut, and chopped pecans.
  10. Pour the batter into the prepared bundt pan.
  11. Bake for 60 to 70 minutes, or until a toothpick comes out clean.
  12. Cool the cake in the pan for 15 minutes, then invert onto a cake stand to cool completely.
