Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • cup unsalted butter
  • cups granulated sugar
  • 2 large eggs
  • ½ tsp vanilla extract
  • cups mashed overripe bananas
  • 1 cup sour cream
  • ½ cup chopped pecans

The icing

  • 3 oz cream cheese
  • cups powdered sugar
  • ½ tsp vanilla extract
  • ¼ - ½ tsp ground cinnamon
  • 2 - 4 tsp milk

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, whip the butter until fluffy, then add the sugar and continue mixing.
  4. Add the eggs one at a time, followed by the vanilla and mashed bananas.
  5. Mix in half of the flour mixture, then add the sour cream, and finally mix in the remaining flour mixture until just combined.
  6. Prepare a bundt pan with non-stick spray and flour, then pour the batter into the pan.
  7. Bake until a toothpick inserted in the center comes out clean, about 40-55 minutes.
  8. Cool the cake in the pan for 5 minutes, then invert onto a wire rack to cool completely.
  9. For the icing, whip together the cream cheese, powdered sugar, vanilla, and cinnamon, adding milk until the desired consistency is reached.
  10. Spread the icing over the cooled cake and sprinkle with chopped pecans if desired.
