Instructions
- Preheat the oven to 350°F.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, whip the butter until fluffy, then add the sugar and continue mixing.
- Add the eggs one at a time, followed by the vanilla and mashed bananas.
- Mix in half of the flour mixture, then add the sour cream, and finally mix in the remaining flour mixture until just combined.
- Prepare a bundt pan with non-stick spray and flour, then pour the batter into the pan.
- Bake until a toothpick inserted in the center comes out clean, about 40-55 minutes.
- Cool the cake in the pan for 5 minutes, then invert onto a wire rack to cool completely.
- For the icing, whip together the cream cheese, powdered sugar, vanilla, and cinnamon, adding milk until the desired consistency is reached.
- Spread the icing over the cooled cake and sprinkle with chopped pecans if desired.
