Ingredients

The cake

  • cups almond flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 large ripe banana, mashed (about ½ cup mashed)
  • 2 units eggs
  • ¼ cup coconut oil, melted
  • cup maple syrup
  • splash vanilla

The frosting

  • 1 block (8 oz) Neufchatel or reduced fat cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp butter, softened
  • 2 tbsp almond milk
  • 1 tsp vanilla
  • ¼ tsp cinnamon
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F and grease a bundt pan.
  2. In a small bowl, mix together almond flour, baking soda, cinnamon, and salt.
  3. In a large bowl, mash the banana and whisk in the eggs, coconut oil, maple syrup, and vanilla.
  4. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Pour the batter into the greased bundt pan and bake for 30 minutes or until a toothpick comes out clean.
  6. While the cake is baking, prepare the cream cheese frosting by blending cream cheese, powdered sugar, butter, almond milk, vanilla, cinnamon, and salt until creamy.
  7. Chill the frosting in the fridge for 30 minutes.
  8. Frost the cake once it has fully cooled.
