Ingredients

The bread

  • 2 cups almond flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • ¼ tsp salt
  • 3 medium ripe bananas
  • 3 large eggs
  • 1 tbsp vanilla extract
  • ¼ cup coconut sugar

The crumble topping

  • 1 cup almond flour
  • ½ cup coconut sugar
  • cup coconut oil
  • 1 tbsp cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare the loaf pan with parchment paper and nonstick spray.
  2. In a small bowl, mix almond flour, baking soda, salt, and cinnamon.
  3. In a large bowl, mash the bananas until smooth, then whisk in the eggs.
  4. Stir in the vanilla and coconut sugar.
  5. Combine the dry ingredients with the wet ingredients and pour into the prepared loaf pan.
  6. In a small bowl, mix the crumble topping ingredients until combined and sprinkle over the batter.
  7. Bake for 50 minutes or until a toothpick comes out clean.
