Instructions
- Soak the beans overnight and discard the water.
- In a pressure cooker, combine soaked beans, ham hock, and bay leaves, adding enough water to cover the beans by at least 3 inches (about 6 cups).
- Bring to a boil, then cover and lock the lid. Cook for 45 minutes on medium-low heat.
- After 45 minutes, turn off the heat and wait for the pressure to release before removing the lid.
- In a large sauté pan, heat the olive oil and sauté the onion, garlic, and parsley over medium heat until the onions are translucent (about 10-15 minutes).
- Add the onion mixture to the beans and cook uncovered for an additional 20-30 minutes, or until the beans reach a thick consistency.
