Ingredients

Main Ingredients

  • 1 piece smoked ham hock or smoked pork chop (6 oz)
  • 2 pieces bay leaves
  • 1 lb dried black beans

Sofrito Ingredients

  • 1 large white onion (minced)
  • 3 cloves garlic (chopped)
  • ¾ bunch parsley (finely chopped, no stems)
  • to taste kosher salt
  • to taste fresh cracked pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Soak the beans overnight and discard the water.
  2. In a pressure cooker, combine soaked beans, ham hock, and bay leaves, adding enough water to cover the beans by at least 3 inches (about 6 cups).
  3. Bring to a boil, then cover and lock the lid. Cook for 45 minutes on medium-low heat.
  4. After 45 minutes, turn off the heat and wait for the pressure to release before removing the lid.
  5. In a large sauté pan, heat the olive oil and sauté the onion, garlic, and parsley over medium heat until the onions are translucent (about 10-15 minutes).
  6. Add the onion mixture to the beans and cook uncovered for an additional 20-30 minutes, or until the beans reach a thick consistency.
