Instructions
- Preheat the oven to 350°F and line an 8x8 or 8-inch round cake pan with parchment paper or nonstick spray.
- In a medium bowl, mix almond flour, baking soda, cinnamon, and salt.
- In a larger bowl, whisk together eggs, coconut oil, maple syrup, vanilla, and almond extract.
- Combine the dry ingredients with the wet ingredients and stir to mix well. Then add chopped pistachios.
- Pour the mixture into the prepared baking dish.
- In a small bowl, mix the crumb topping ingredients until fully combined and sprinkle over the cake batter.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Let the cake cool for at least 30 minutes before serving. Optionally, sprinkle with powdered sugar.
