Ingredients

The cake

  • 2 ¼ cups almond flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp salt
  • 3 large eggs
  • cup melted coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ¾ cup chopped pistachios

The crumb topping

  • 1 cup almond flour
  • ¾ cup chopped pistachios
  • ½ cup coconut sugar
  • cup melted coconut oil
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F and line an 8x8 or 8-inch round cake pan with parchment paper or nonstick spray.
  2. In a medium bowl, mix almond flour, baking soda, cinnamon, and salt.
  3. In a larger bowl, whisk together eggs, coconut oil, maple syrup, vanilla, and almond extract.
  4. Combine the dry ingredients with the wet ingredients and stir to mix well. Then add chopped pistachios.
  5. Pour the mixture into the prepared baking dish.
  6. In a small bowl, mix the crumb topping ingredients until fully combined and sprinkle over the cake batter.
  7. Bake for 45-55 minutes or until a toothpick comes out clean.
  8. Let the cake cool for at least 30 minutes before serving. Optionally, sprinkle with powdered sugar.
