Garlic and Rosemary Focaccia Bread

Ingredients

The dough

  • 3 ¼ cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 ½ cups water
  • 4 ½ tablespoons extra virgin olive oil

Toppings

  • 3 cloves garlic, thinly sliced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon dried rosemary
  • ¼ teaspoon sea salt

Instructions

  1. Combine flour, dry yeast, sugar, and salt in a mixing bowl.
  2. Warm water with 2 tablespoons of olive oil until very warm but not hot.
  3. Add the warmed water-oil mixture to the flour mixture.
  4. Fold the dough a few times, place in an oiled bowl, and cover. Allow it to rise for 6-8 hours on the counter or 18-24 hours in the fridge.
  5. Generously oil a 13 x 9-inch pan and pour the dough in.
  6. Cover with a towel and let rise in a warm place for about 2 hours.
  7. Preheat the oven to 400°F (200°C).
  8. Dimple the focaccia with your fingers, add garlic pieces, sprinkle with Italian seasoning and rosemary, and drizzle with remaining olive oil and sea salt.
  9. Bake for 30 minutes until golden brown, then cool slightly before serving.
