Homemade Japanese Curry Roux

Ingredients

Spices

  • 1 tsp turmeric
  • 1 tsp cardamom
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp garlic powder
  • 1 tsp nutmeg
  • 1 tsp garam masala
  • 1 tsp black pepper
  • 1 tsp ginger powder
  • 1 tsp onion powder
  • 1 tsp chilli powder
  • 1 tsp curry powder

Base Ingredients

  • 150 g butter
  • 150 g plain (all purpose) flour
  • 3 tbsp honey

Instructions

  1. Roast all selected spices in a non-stick frying pan over low heat for about 5 minutes until fragrant, then set aside.
  2. Melt butter in a frying pan over low heat and add honey.
  3. Add flour into the frying pan and stir to combine butter and flour, stirring for about 15 minutes until smooth.
  4. Add the roasted spices into the frying pan and mix well.
  5. Line container(s) with cling wrap and pour the roux into the containers.
  6. Cover and wrap the curry roux with cling wrap, making scores on them for easy breaking later.
  7. Place in the fridge overnight to set.
