Ingredients

The curry roux

  • 3 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • ΒΌ teaspoon cayenne pepper

The fries

  • 1 30-ounce bag frozen french fries
  • 4 tablespoons Japanese curry roux
  • 3 cups chicken stock
  • 2 handfuls shredded mild white cheese
  • 6 over-easy eggs
  • 2 stalks green onions

Optional toppings

  • 6 pieces grape tomatoes
  • 3 tablespoons black sesame seeds
  • 2 tablespoons togarashi

Instructions

  1. Prepare the curry roux by melting butter in a small saucepan, then whisk in flour until combined and cook until golden brown.
  2. Add curry powder, garam masala, and cayenne pepper to the roux and cook for an additional 30 seconds.
  3. For the fries, preheat the oven and cook the frozen fries according to package instructions.
  4. In another saucepan, combine the curry roux with chicken stock and whisk until well mixed, then bring to a boil and simmer until thickened.
  5. Stir in the shredded cheese until melted and well incorporated.
  6. Once the fries are cooked, place them in serving dishes, top with an over-easy egg, and pour the curry sauce over everything.
  7. Garnish with sliced green onions and optional toppings like grape tomatoes, sesame seeds, and togarashi.
