Curry Garlic Sweet Potato Fries with Miso Gravy

Instructions
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
- Peel and cut the sweet potatoes into ½ inch fries, then toss with olive oil, curry powder, garlic, salt, and pepper.
- Spread the fries in a single layer on the baking sheet and roast for 20 minutes.
- Remove the garlic, toss the fries, and return them to the oven for another 15 minutes until crisp.
- Chop the roasted garlic and set aside.
- In a saucepan, combine chopped garlic, vegetable stock, thyme, chili paste, maple syrup, olive oil, and balsamic vinegar over medium heat.
- In a separate bowl, mix the remaining vegetable stock with miso and flour (or arrowroot).
- Add the miso mixture to the saucepan and whisk until thickened.
- Strain the gravy and pour it over the fries, then top with black beans and green onions.
