Curry Garlic Sweet Potato Fries with Miso Gravy

Ingredients

The fries

  • 1 lb sweet potatoes
  • 1 ½ tablespoons olive oil
  • 2 teaspoons curry powder
  • 3 cloves garlic
  • to taste salt
  • to taste pepper
  • ½ cup cooked black beans
  • 1-2 green onions

The miso gravy

  • ½ cup vegetable stock
  • 2 tablespoons vegetable stock
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon chili paste/sriracha
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons mellow white miso
  • 1 tablespoon whole spelt flour
  • 2 teaspoons arrowroot powder
  • fresh ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. Peel and cut the sweet potatoes into ½ inch fries, then toss with olive oil, curry powder, garlic, salt, and pepper.
  3. Spread the fries in a single layer on the baking sheet and roast for 20 minutes.
  4. Remove the garlic, toss the fries, and return them to the oven for another 15 minutes until crisp.
  5. Chop the roasted garlic and set aside.
  6. In a saucepan, combine chopped garlic, vegetable stock, thyme, chili paste, maple syrup, olive oil, and balsamic vinegar over medium heat.
  7. In a separate bowl, mix the remaining vegetable stock with miso and flour (or arrowroot).
  8. Add the miso mixture to the saucepan and whisk until thickened.
  9. Strain the gravy and pour it over the fries, then top with black beans and green onions.
