Ingredients

The bread

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon all spice
  • 2 large eggs
  • ¼ cup canola oil or vegetable oil
  • ¼ cup applesauce
  • 1 teaspoon vanilla
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 cup chopped rhubarb
  • 1 cup chopped apples (skin removed)

Cinnamon Sugar Topping

  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare an 8 by 4 loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and all spice.
  3. In a stand mixer, beat the eggs, then add canola oil, applesauce, and vanilla, mixing until combined.
  4. Add the sugars and beat until smooth.
  5. Gradually mix in the flour mixture until just combined, then fold in the rhubarb and apple.
  6. Pour the batter into the prepared loaf pan.
  7. Mix sugar and cinnamon for the topping and sprinkle it over the batter.
  8. Bake for 50-55 minutes or until golden and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.
