Instructions
- Preheat the oven to 350°F and prepare an 8 by 4 loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and all spice.
- In a stand mixer, beat the eggs, then add canola oil, applesauce, and vanilla, mixing until combined.
- Add the sugars and beat until smooth.
- Gradually mix in the flour mixture until just combined, then fold in the rhubarb and apple.
- Pour the batter into the prepared loaf pan.
- Mix sugar and cinnamon for the topping and sprinkle it over the batter.
- Bake for 50-55 minutes or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.
