Instructions
- Combine all ingredients cold or warmed.
- Divide quinoa between two bowls.
- Layer spinach, meatballs, tofu, roasted sweet potatoes, roasted cauliflower, and broccolini on top of quinoa.
- In a small bowl, whisk together the dressing ingredients.
- Drizzle the dressing over the bowls.
- Garnish with pickled onions and chopped cilantro.
