Buddha Bowls with Turkey Meatballs or Tofu

Ingredients

The base

  • 2 cups cooked quinoa

The vegetables

  • 1 cup roasted sweet potatoes
  • 1 cup roasted cauliflower
  • 1 cup spinach leaves
  • ½ cup roasted or blanched broccolini

The protein

  • ¾ cup baked tofu
  • ½ cup baked turkey meatballs

The dressing

  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon canola oil
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • ½ teaspoon sesame oil
  • ¼ teaspoon freshly ground black pepper

Garnishes

  • ¼ cup pickled onions
  • to taste fresh cilantro

Instructions

  1. Combine all ingredients cold or warmed.
  2. Divide quinoa between two bowls.
  3. Layer spinach, meatballs, tofu, roasted sweet potatoes, roasted cauliflower, and broccolini on top of quinoa.
  4. In a small bowl, whisk together the dressing ingredients.
  5. Drizzle the dressing over the bowls.
  6. Garnish with pickled onions and chopped cilantro.
  7. Enjoy warmed or at room temperature.
