Caramelized Onion Galette

Ingredients

The pastry

  • ¾ cup whole grain spelt flour
  • ¾ cup all purpose flour
  • 1 teaspoon fine-grain salt
  • ½ cup cold butter, cut into cubes
  • 3-4 tablespoons ice water

The filling

  • 4 large yellow onions
  • 3 tablespoons olive oil
  • 2 ounces soft goat's cheese
  • 1 tablespoon fresh thyme leaves
  • to taste salt
  • to taste pepper
  • extra thyme sprigs for garnish

Instructions

  1. Make the pastry by combining spelt flour, all purpose flour, salt, and butter in a food processor until the mixture resembles grains of rice.
  2. Add ice water gradually until the pastry holds together but is still crumbly. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Prepare the onions by slicing them thinly and cooking them in a skillet with olive oil over medium heat for about 30 minutes until caramelized.
  4. Once the onions are caramelized, mix in thyme and season with salt and pepper. Set aside to cool.
  5. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  6. Roll out the chilled pastry into a thin disk and transfer it to the baking sheet.
  7. Spread the cooled onions over the center of the pastry, leaving some edges to fold over.
  8. Crumble goat cheese over the onions and fold the pastry edges in to cover part of the filling.
  9. Bake the galette for 35-40 minutes until the pastry is golden and the onions are bubbling.
  10. Let cool for 10 minutes before slicing and serving.
