Caramelized Onion Galette

The filling

Instructions
- Make the pastry by combining spelt flour, all purpose flour, salt, and butter in a food processor until the mixture resembles grains of rice.
- Add ice water gradually until the pastry holds together but is still crumbly. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Prepare the onions by slicing them thinly and cooking them in a skillet with olive oil over medium heat for about 30 minutes until caramelized.
- Once the onions are caramelized, mix in thyme and season with salt and pepper. Set aside to cool.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Roll out the chilled pastry into a thin disk and transfer it to the baking sheet.
- Spread the cooled onions over the center of the pastry, leaving some edges to fold over.
- Crumble goat cheese over the onions and fold the pastry edges in to cover part of the filling.
- Bake the galette for 35-40 minutes until the pastry is golden and the onions are bubbling.
- Let cool for 10 minutes before slicing and serving.
