Ingredients

  • 8 slices uncooked center cut bacon, chopped
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons light butter
  • 1 ½ cups skim milk
  • 2 ½ cups water
  • 12 oz dry whole wheat elbow macaroni
  • 3 ½ cups broccoli florets
  • 6 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. 1. Cook the chopped bacon in a large pot over medium heat until crisp, then drain on paper towels.
  2. 2. Discard the grease and wipe out the pot.
  3. 3. Mix salt, pepper, and flour in a small dish.
  4. 4. Melt the butter in the pot, then whisk in the flour mixture gradually until smooth.
  5. 5. Slowly whisk in the milk and then the water, scraping up any browned bits.
  6. 6. Increase heat to medium-high and stir until boiling, then reduce to medium-low.
  7. 7. Add the macaroni and cook for 8-10 minutes, stirring regularly.
  8. 8. Microwave the broccoli for 2 minutes until bright green and firm.
  9. 9. Once pasta is cooked, reduce heat to low and stir in the cheese until melted.
  10. 10. Add the broccoli and bacon to the pot, stir to combine, and serve.
