Ingredients

Dry Ingredients

  • cups all-purpose flour
  • ½ cup coconut sugar
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • 2 teaspoons cinnamon

Wet Ingredients

  • 6 tablespoons Greek yogurt
  • ¾ cup milk
  • 6 tablespoons coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini

Optional Ingredients

  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and line a muffin tin with liners.
  2. In a bowl, mix the dry ingredients: flour, sugar, baking soda, baking powder, and cinnamon.
  3. In another bowl, combine the wet ingredients: yogurt, milk, oil, vanilla, and zucchini.
  4. Fold the dry ingredients into the wet ingredients until combined, then stir in the chocolate chips.
  5. Distribute the batter evenly in the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-17 minutes, or until a toothpick comes out clean.
  7. Allow the muffins to cool in the pan for 10 minutes before transferring to a wire rack.
