Instructions
- Preheat the oven to 350°F and line the muffin tin with muffin liners, spraying them with nonstick spray.
- In a small bowl, combine the oat flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, whisk together the eggs, applesauce, and melted coconut oil, then add the maple syrup and vanilla, mixing until well combined.
- Add the dry ingredients to the wet mixture and stir until just combined, being careful not to overmix.
- Gently fold in the shredded zucchini and chocolate chips.
- Scoop the batter into the prepared muffin liners and bake for 20-22 minutes.
- Let the muffins cool for at least 15 minutes before removing them from the tin and serving.
