Ingredients

Dry Ingredients

  • 2 cups oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon

Wet Ingredients

  • 2 eggs
  • ½ cup unsweetened applesauce
  • ½ cup coconut oil, melted
  • cup maple syrup
  • 1 tsp vanilla

Add-ins

  • 1 cup shredded zucchini
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line the muffin tin with muffin liners, spraying them with nonstick spray.
  2. In a small bowl, combine the oat flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, whisk together the eggs, applesauce, and melted coconut oil, then add the maple syrup and vanilla, mixing until well combined.
  4. Add the dry ingredients to the wet mixture and stir until just combined, being careful not to overmix.
  5. Gently fold in the shredded zucchini and chocolate chips.
  6. Scoop the batter into the prepared muffin liners and bake for 20-22 minutes.
  7. Let the muffins cool for at least 15 minutes before removing them from the tin and serving.
