Ingredients

  • cups grated zucchini

Instructions

  1. Preheat the oven to 350°F and prepare muffin tins with liners or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk together the maple syrup, applesauce, melted coconut oil, egg, and vanilla until smooth.
