Ingredients

  • cups white whole wheat flour
  • cup coconut sugar
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp fine sea salt
  • ½ cup plain yogurt
  • cup avocado oil
  • ¼ cup milk
  • 1 large egg
  • 2 tsp vanilla extract
  • cups fresh grated zucchini
  • ½ cup chocolate chips
  • cup chopped walnuts

Instructions

  1. Preheat the oven to 425°F and grease a muffin tin.
  2. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the wet ingredients: yogurt, oil, milk, vanilla, and egg, then stir in the grated zucchini.
  4. Combine the wet and dry ingredients, stirring until just mixed. Gently fold in chocolate chips and walnuts.
  5. Spoon the batter into the muffin cups and optionally sprinkle with sugar on top.
  6. Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for an additional 13-14 minutes until a knife comes out clean.
  7. Cool the muffins in the tin for 15 minutes before transferring them to a wire rack.
