Instructions
- Preheat the oven to 425°F and grease a muffin tin.
- In a large bowl, mix the dry ingredients: flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the wet ingredients: yogurt, oil, milk, vanilla, and egg, then stir in the grated zucchini.
- Combine the wet and dry ingredients, stirring until just mixed. Gently fold in chocolate chips and walnuts.
- Spoon the batter into the muffin cups and optionally sprinkle with sugar on top.
- Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for an additional 13-14 minutes until a knife comes out clean.
- Cool the muffins in the tin for 15 minutes before transferring them to a wire rack.
