Restaurant Style Veal Parmesan

Ingredients

The veal and breading

  • 7 oz veal slices
  • 1 cup flour seasoned with sea salt and black pepper
  • 1 cup egg wash (2 eggs whipped with water or milk)
  • 1 cup Italian seasoned bread crumbs
  • 1 oz prosciutto (2 thin slices)

The sauce and cheese

  • 8 oz spaghetti sauce
  • 4 oz mozzarella cheese, shredded
  • 2 tablespoons grated Romano cheese
  • 1 teaspoon Italian parsley, finely chopped (optional)

Instructions

  1. Pound out the veal slices and seam them together if necessary.
  2. Set up a breading station with seasoned flour, egg wash, and bread crumbs.
  3. Coat the veal cutlet with flour, dip in egg wash, and then coat with bread crumbs.
  4. Heat about ½ inch of oil in a skillet over medium-high heat and pan-fry the veal cutlet until golden brown on both sides.
  5. Drain the fried cutlets on a rack.
  6. On a sheet pan, add a little marinara sauce and place the fried cutlet on top.
  7. Layer the prosciutto, more marinara sauce, grated Romano cheese, and shredded mozzarella on top.
  8. Bake in a 350°F oven for 12-15 minutes until the cheese is melted.
  9. Serve with your favorite pasta.
