Ingredients

The veal

  • 8 oz veal cutlet

Breading Station

  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ¼ cup milk or water
  • 1 cup panko bread crumbs
  • ¼ cup Romano or Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • teaspoon black pepper
  • 2 tablespoons Italian parsley
  • 1 teaspoon lemon zest

Cooking

  • ½ cup vegetable oil

Instructions

  1. Pound out the veal slices with a meat hammer, seaming them together if needed.
  2. Mix flour, salt, and pepper in a shallow bowl.
  3. In a second bowl, lightly beat the eggs with milk or water for the egg wash.
  4. In a third bowl, combine panko bread crumbs, cheese, garlic powder, onion powder, black pepper, parsley, and lemon zest.
  5. Coat the veal cutlets in the seasoned flour, dip in the egg wash, and then coat with the bread crumb mixture.
  6. Heat vegetable oil in a large frying pan over medium-high heat.
  7. Fry the breaded veal cutlets until golden brown, about 2 minutes per side.
  8. Remove the cooked cutlets and drain on a wire rack or paper towels.
