Ingredients

The cutlets

  • 1 1/4 pounds veal cutlets
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon fresh thyme, finely chopped
  • 2 tablespoons parsley, finely chopped

The breading

  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1 1/4 cups panko breadcrumbs or Italian breadcrumbs
  • 1/3 cup parmesan cheese, freshly grated

For frying

  • 1/2 cup canola oil

Instructions

  1. Season the veal cutlets with salt, pepper, thyme, and parsley.
  2. Prepare three shallow dishes: one with flour and salt, one with beaten eggs, and one with breadcrumbs mixed with parmesan cheese.
  3. Coat each veal cutlet in flour, then dip in eggs, and finally coat with breadcrumbs.
  4. Heat oil in a skillet over medium-high heat until shimmering.
  5. Fry the breaded veal cutlets for 2-3 minutes on each side until crispy.
  6. Serve immediately with lemon wedges.
