Instructions
- Pound the veal cutlets to ¼-inch thickness and season with salt and pepper.
- Set up a breading station with flour in one bowl, whisked eggs in another, and a mixture of breadcrumbs and parmesan in a third.
- Dredge each veal cutlet in flour, then dip in eggs, and finally coat with the breadcrumb mixture.
- Heat olive oil and butter in a skillet over medium heat, then fry the veal cutlets until golden brown on both sides.
- Remove the cutlets and place them on a wire rack to drain excess oil before serving.
