Ingredients

The veal

  • 4 pieces veal fillets

The seasoning and coating

  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 cup panko breadcrumbs
  • ½ cup parmesan cheese

The cooking fats

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter

To serve

  • to taste lemon wedges

Instructions

  1. Pound the veal cutlets to ¼-inch thickness and season with salt and pepper.
  2. Set up a breading station with flour in one bowl, whisked eggs in another, and a mixture of breadcrumbs and parmesan in a third.
  3. Dredge each veal cutlet in flour, then dip in eggs, and finally coat with the breadcrumb mixture.
  4. Heat olive oil and butter in a skillet over medium heat, then fry the veal cutlets until golden brown on both sides.
  5. Remove the cutlets and place them on a wire rack to drain excess oil before serving.
