Super Easy Shrimp Bisque

Ingredients

The broth

  • 5 cups water
  • 2 cups beef broth
  • 1 leaf bay leaf
  • 1 pound shrimp (raw, shells on)

The soup

  • 2 tablespoons butter
  • ½ onion diced
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 pinch cayenne pepper
  • ½ cup heavy cream
  • to taste thyme (optional garnish)

Instructions

  1. Combine water, beef stock, and bay leaf in a large pot over high heat.
  2. Peel and devein the shrimp, adding the shells to the boiling water mixture and boiling for 15 minutes.
  3. Strain the broth through a fine sieve and discard the shells.
  4. Melt butter in the pot over medium heat, then add onion, celery, and garlic, cooking until softened.
  5. Add the raw shrimp and tomato paste, cooking until shrimp are pink and firm.
  6. Return the strained broth to the pot, add salt and cayenne pepper, and bring to a boil before simmering for 10 minutes.
  7. Puree the soup, stir in the cream, and serve warm with thyme if desired.
