Deconstructed Sushi Salad

Ingredients

Salad Bowl

  • 4 cups chopped baby spinach
  • cup cooked brown rice
  • 1 ½ cups shelled edamame
  • ½ each English cucumber
  • ½ cup shredded carrots
  • 8-10 each seaweed snacks or nori
  • ½ each avocado
  • 2 tablespoons hemp seeds or sesame seeds

Sesame Ginger Miso Dressing

  • 1 tablespoon miso
  • 2 tablespoons warm water
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Add spinach to bowls and top with sections of brown rice, edamame, cucumber, carrots, seaweed, and avocado.
  2. Sprinkle hemp seeds on top.
  3. In a small bowl, mix miso and water until combined.
  4. Add remaining dressing ingredients and mix well.
  5. Drizzle dressing over salad bowls and serve. If preparing ahead, keep dressing separate until ready to eat.
