Ingredients

The peppers

  • 3 pieces colorful bell peppers

The filling

  • 1 tablespoon olive oil
  • ½ small onion, diced
  • ½ pound ground beef
  • 1 cup corn
  • 2 cups cooked black beans
  • 2 teaspoons taco seasoning
  • ¾ cup grated Monterey Jack cheese
  • to taste cilantro for garnish

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the stems out of the peppers and halve them.
  3. In a skillet, sauté the onion in olive oil until softened.
  4. Add the ground beef and cook until browned.
  5. Stir in the corn, black beans, and taco seasoning, and simmer for a few minutes.
  6. Divide the mixture among the pepper halves.
  7. Pour ¼ cup of water into a baking dish and place the stuffed peppers in it, covering with foil.
  8. Bake for 25 to 30 minutes until the peppers are tender.
  9. Remove the foil, add cheese on top, and bake for an additional 3 to 5 minutes to melt the cheese.
  10. Garnish with cilantro and serve warm.
