Taco Stuffed Peppers

Instructions
- Preheat the oven to 350°F.
- Cut the stems out of the peppers and halve them.
- In a skillet, sauté the onion in olive oil until softened.
- Add the ground beef and cook until browned.
- Stir in the corn, black beans, and taco seasoning, and simmer for a few minutes.
- Divide the mixture among the pepper halves.
- Pour ¼ cup of water into a baking dish and place the stuffed peppers in it, covering with foil.
- Bake for 25 to 30 minutes until the peppers are tender.
- Remove the foil, add cheese on top, and bake for an additional 3 to 5 minutes to melt the cheese.
- Garnish with cilantro and serve warm.
