Beef Taco Stuffed Peppers

Instructions
- Cut the peppers in half vertically and remove the seeds.
- Broil the peppers skin side up for 5-6 minutes until blackened, then cool for 30 minutes.
- Brown the ground beef and onion in a skillet over medium-high heat.
- Add taco seasoning and simmer for 10 minutes.
- If using, stir in the rice, cream cheese, and ½ cup of shredded cheese until creamy.
- Fill the peppers with the mixture and top with the remaining cheese.
- Cover with foil and bake at 350°F for 20 minutes.
- Remove the foil and broil the top until browned.
- Serve with your favorite taco toppings.
