Beef Taco Stuffed Peppers

Ingredients

The peppers

  • 4 pieces Bell Peppers

The filling

  • 1 lb Lean Ground Beef
  • ½ cup Yellow Onion, Finely Diced
  • 1 packet Taco Seasoning
  • ¼ cup Reduced Fat Cream Cheese
  • cups Shredded Colby Jack Cheese
  • 1 cup Rice, cooked

Instructions

  1. Cut the peppers in half vertically and remove the seeds.
  2. Broil the peppers skin side up for 5-6 minutes until blackened, then cool for 30 minutes.
  3. Brown the ground beef and onion in a skillet over medium-high heat.
  4. Add taco seasoning and simmer for 10 minutes.
  5. If using, stir in the rice, cream cheese, and ½ cup of shredded cheese until creamy.
  6. Fill the peppers with the mixture and top with the remaining cheese.
  7. Cover with foil and bake at 350°F for 20 minutes.
  8. Remove the foil and broil the top until browned.
  9. Serve with your favorite taco toppings.
