Ingredients

The filling

  • 1 lb grassfed ground beef
  • ½ unit onion, diced
  • 1 can diced green chilies (~4oz)
  • 1 batch homemade taco seasoning
  • 2 cups rice (optional - omit for Whole30 & Keto)

The peppers

  • 4 unit bell peppers, cut in half with tops cut off and seeds removed

The taco seasoning

  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • ¼ tsp pepper
  • ¼ tsp salt
  • ¼ tsp oregano

Instructions

  1. If using rice, cook it and have it ready.
  2. Heat a large pan over medium heat and add the ground beef and onion to brown.
  3. Mix the taco seasoning and prepare the peppers while the beef is cooking.
  4. Preheat the oven to 350 degrees.
  5. Once the beef is browned, add the taco seasoning and green chilies, mixing well.
  6. If using, add the rice and mix everything together.
  7. Place the bell peppers on a baking sheet and fill them with the beef mixture.
  8. Bake in the oven for 15-20 minutes until the peppers are cooked to your liking.
  9. Serve with optional toppings like salsa, tomatoes, olives, avocado, and cilantro.
