Instructions
- Mix all taco seasoning ingredients in a bowl or jar and set aside.
- Dice the onion and gather the remaining ingredients. Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large skillet over medium heat, cook the ground beef and onion until the beef is almost cooked through.
- Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
- Add the taco seasoning to the beef mixture and cook for 1-2 minutes.
- Stir in the cauliflower rice, fire roasted tomatoes, and olives, then remove from heat.
- Fill each bell pepper with the beef mixture and top with cheese.
- Bake in the oven for 15 minutes or until the peppers are cooked to your liking.
