Ingredients

The filling

  • 1 lb ground beef
  • ½ small onion, diced
  • 2 cups cauliflower rice
  • 1 can (14.5 oz) fire roasted tomatoes, drained
  • 1 can (14.5 oz) sliced olives
  • 6 bell peppers
  • 1 cup shredded cheese

The taco seasoning

  • tsp chili powder
  • tsp cumin
  • 1 tsp paprika
  • ¾ tsp garlic powder
  • ½ tsp oregano
  • ½ tsp pepper
  • ½ tsp salt
  • ¼ tsp onion powder
  • ¼ tsp cayenne pepper

Optional toppings

  • Avocado slices
  • Chopped cilantro
  • Hot sauce

Instructions

  1. Mix all taco seasoning ingredients in a bowl or jar and set aside.
  2. Dice the onion and gather the remaining ingredients. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  3. In a large skillet over medium heat, cook the ground beef and onion until the beef is almost cooked through.
  4. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
  5. Add the taco seasoning to the beef mixture and cook for 1-2 minutes.
  6. Stir in the cauliflower rice, fire roasted tomatoes, and olives, then remove from heat.
  7. Fill each bell pepper with the beef mixture and top with cheese.
  8. Bake in the oven for 15 minutes or until the peppers are cooked to your liking.
