Keto Stuffed Pepper Soup

Ingredients

  • 1 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 2 lb Ground beef
  • 3 medium Bell peppers (diced)
  • 2 14.5-oz cans Diced tomatoes (with liquid, do not drain)
  • 1 29-oz can Tomato sauce
  • 2 cups Beef bone broth
  • 2 cups Water
  • 1 tbsp Italian seasoning
  • 2 tsp Sea salt (to taste)
  • ½ tsp Black pepper (to taste)
  • 12 oz Cauliflower rice (fresh or frozen)

Instructions

  1. Heat olive oil in a dutch oven over medium-high heat and sauté minced garlic until fragrant.
  2. Add ground beef and cook, breaking it up, until browned.
  3. Stir in bell peppers, diced tomatoes, tomato sauce, bone broth, water, and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer until the peppers are tender, about 10-15 minutes.
  5. Add cauliflower rice and cook until tender, about 3-4 minutes.
  6. Season with salt and pepper to taste.
