Stuffed Green Pepper Soup

Ingredients

The soup base

  • 2 tsp Olive Oil
  • ½ lb Lean Ground Beef
  • ½ cup Yellow Onion, finely chopped
  • 1 ea Green Bell Pepper, finely chopped
  • ½ tsp Italian Seasoning
  • 2 cloves Garlic, minced
  • 1 tbsp Brown Sugar
  • 1 tsp Tomato Paste
  • 1 can Tomato Sauce (15 oz.)
  • 2 cups Beef Broth
  • 1 cup Cooked Rice

Seasoning

  • to taste Salt
  • to taste Freshly Cracked Black Pepper

Instructions

  1. Heat olive oil in a medium-sized saucepan over medium heat.
  2. Add ground beef, onion, and a pinch of salt and pepper, cooking until the beef is browned.
  3. Stir in green pepper, Italian seasoning, garlic, brown sugar, and tomato paste, cooking for 3-4 minutes until the peppers are tender.
  4. Add tomato sauce and beef broth, cover, and cook for 25 minutes over low heat.
  5. Uncover and stir in cooked rice, cooking for an additional 10 minutes.
  6. Season with salt and pepper to taste, and serve hot.
