Ingredients

The soup

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 small yellow onion
  • 1 small red pepper
  • 1 small green pepper
  • 2 cloves garlic
  • 2 14.5 oz cans fire roasted diced tomatoes
  • 1 15 oz can tomato sauce
  • ¼ cup chopped parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 2–3 cups beef broth
  • 3 cups frozen cauliflower rice

Optional garnishes

  • to taste cheese
  • to taste parsley

Instructions

  1. Heat 1 tbsp of olive oil in a large pot over medium-high heat, then add the ground beef and cook until browned, then drain.
  2. In the same pot, add the remaining olive oil and sauté the onion and peppers until soft, about 5 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the fire roasted diced tomatoes, tomato sauce, and chopped parsley, then return the cooked meat to the pot.
  5. Add the dried basil, oregano, salt, pepper, and beef broth, then let the mixture simmer on low for 20 minutes, stirring occasionally.
  6. In the last 5 minutes, stir in the frozen cauliflower rice and allow it to heat through.
  7. Serve hot, optionally topped with cheese and additional parsley.
