Healthy Stuffed Pepper Soup

Instructions
- Heat 1 tbsp of olive oil in a large pot over medium-high heat, then add the ground beef and cook until browned, then drain.
- In the same pot, add the remaining olive oil and sauté the onion and peppers until soft, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Stir in the fire roasted diced tomatoes, tomato sauce, and chopped parsley, then return the cooked meat to the pot.
- Add the dried basil, oregano, salt, pepper, and beef broth, then let the mixture simmer on low for 20 minutes, stirring occasionally.
- In the last 5 minutes, stir in the frozen cauliflower rice and allow it to heat through.
- Serve hot, optionally topped with cheese and additional parsley.
