Instructions
- Preheat the oven to 400°F.
- Trim about ¼-inch from the top of each bell pepper and remove the stems, ribs, and seeds.
- Heat avocado oil in a large skillet over medium-high heat.
- Add ground beef, Italian seasoning, salt, onion powder, and garlic powder to the skillet and cook until browned, about 5 minutes.
- Stir in tomato paste and cauliflower rice, cooking for an additional 3 minutes.
- Stuff the bell peppers with the beef mixture.
- Place the stuffed peppers in a baking dish, top each with shredded cheese, and cover with aluminum foil.
- Bake for 30 minutes covered, then remove the foil and bake for another 10 minutes until cheese is melted and bubbly.
- Top with fresh chopped parsley and serve.
