Cheesy Keto Stuffed Peppers

Ingredients

The peppers

  • 4 large bell peppers

The filling

  • 1 tablespoon avocado oil
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 ½ teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 2 tablespoons tomato paste
  • 1 cup cauliflower rice
  • 1 cup freshly shredded cheddar cheese
  • to taste fresh chopped parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Trim about ¼-inch from the top of each bell pepper and remove the stems, ribs, and seeds.
  3. Heat avocado oil in a large skillet over medium-high heat.
  4. Add ground beef, Italian seasoning, salt, onion powder, and garlic powder to the skillet and cook until browned, about 5 minutes.
  5. Stir in tomato paste and cauliflower rice, cooking for an additional 3 minutes.
  6. Stuff the bell peppers with the beef mixture.
  7. Place the stuffed peppers in a baking dish, top each with shredded cheese, and cover with aluminum foil.
  8. Bake for 30 minutes covered, then remove the foil and bake for another 10 minutes until cheese is melted and bubbly.
  9. Top with fresh chopped parsley and serve.
