Ingredients

The Peppers

  • 3 large bell peppers

The Filling

  • 1 teaspoon olive oil
  • ¼ teaspoon fennel seeds
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup whole milk ricotta cheese
  • ¼ cup Parmesan cheese

Instructions

  1. Preheat the oven to 350°F and prepare the baking dish.
  2. Halve the bell peppers, remove seeds, and place them in the baking dish.
  3. Heat olive oil in a pan, add fennel seeds, and cook until fragrant.
  4. Add ground beef to the pan and cook until browned, then stir in the tomato sauce and cook until thickened.
  5. Mix half of the mozzarella cheese into the meat sauce.
  6. Fill the peppers with the meat sauce halfway, add ricotta cheese, and top with remaining meat sauce.
  7. Cover the dish with parchment and foil, then bake for 30 minutes.
  8. Remove the cover, add remaining ricotta and mozzarella, and bake uncovered for an additional 10-15 minutes.
  9. Broil for a few minutes until cheese is browned, then top with Parmesan cheese before serving.
